Turkey Kielbasa & Egg Strata

Ingredients
2 dozen eggs (or 8 eggs and 16 egg whites)1 cup of chopped fresh broccoli1/2 cup of chopped mushrooms
Directions
Combine eggs and egg whites in a bowl and beat with a hand mixer or a whisk. In a separate bowl combine sliced turkey kielbasa, chopped mushrooms, and chopped broccoli together. Coat a 4 quart glass dish with non-stick spray. Transfer turkey and veggie mixture to coated glass dish. Pour blended eggs over the turkey and veggies. Place dish in the center of a preheated 325 degree oven for approximately 45 minutes or until the internal temperature reaches 160 degrees. Serve hot or cold! Makes 8 2x3 inch servings. For lower fat/calories/cholesterol use only egg whites. Change up the veggie ingredients with your favorite veggies.
