Cheese and Spinach Quiche

Ingredients
4 sheets filo pastry50g low fat cheese, grated30g parmesan cheese, grated100ml light cream1 bunch spinach or silverbeet, chopped1 small onion, finely chopped3 eggs, lightly beaten1 tbs parsley,l finely chopped
Directions
Preheat oven to 200C. Lightly coat 23cm quiche dish with cooking oil spray. Layer with filo pastry, spraying with oil between each sheet. Trim pastry to fit the dish.
combine all over ingredients and pour into pie shell.
Bake for 20 min or until firm.
Serve with a nice fresh green salad.
