Ingredients
2 cups cooked black-eye peas,or 1 15oz can drained1 1/2 cups cooked brown rice1/2finely diced green onions1 celery stalk, thinly diced(about1/2cup)1 tomato,diced2 tablespoons finely chopped fresh parsley1/4 cup lemon juice1 tablespoon olive oil1/4 teaspoon salt1 - 2 garlic cloves,crushed
Directions
Combine peas,rice,greenonions,celery,tomato,and parsley in mixing bowl. In a small bowl,mix together lemon juice,oil,salt, and garlis and pour over salad. Toss gently. Chill 1 to 2 hours if time permits.
