South Beach Black Bean Soup

Ingredients
I TBSP Olive Oil3 cloves garlic, minced3 scallions, thinly sliced1 celery stalk, thinly sliced1 TBSP Cumin1/8 tsp cayenne pepper2 15 oz cans black beans with liquid1 15 oz can diced tomatoes with liquid1.5 cups fat free chicken broth
Directions
Add all ingredients up to cayenne pepper in a medium size pot and cook until vegetables are soft about 7 minutes.

Add beans, tomatoes and broth, bring to a simmer and cook for 10 minutes. Puree 2 cups of soup in food processor, add back into soup and simmer another 10 minutes. Serve hot.
