8 medium peppers1.25 LB box of jennie-o ground turkey1LB trader joes 96/4 ground turkey1.5 cups bulgher (soak - throw out water; do not cook)1 lg egg, beaten1 8 oz. can tomato sauce1 14.5 oz can petite diced tomatoes1 tsp each - salt, ground pepper, ground cumin2 tb ea cilantro; parsley1 large onion diced12 mini carrot sticks, shreddedPrep: 1) Best to use peppers that stand up; cut off tops and remove seeds from core. put in microwave proof dish. add 1/2 cup water and microwave for 3 minutes. Remove, rinse out & dry dish. spray with Pam. 2) Preheat oven to 350 degrees. 3) in a large bowl, combine meats, spices, onions, bulghur, herbs, tomato sauce and egg. Mix well. Pour 1/2 of diced tomatoes in baking dish. Fill each pepper w/ 2/3 to 3/4 c of meat mixture and place in baking dish. Bake for 35 minutes; check for doneness; pour remaining diced tomatoes over tops and bake 10 more minutes.combine meats, onion, spices and
makes enough to fill 8 medium peppers. Use different colors -- green, red, yellow and purple -- and eat in good health!
