Curried Pumpkin Soup

Ingredients
1 Tablespoon olive oil1 medium onion, finely minced1/2 lb fresh mushrooms, thinly sliced2 Tablespoons flour1 teaspoon curry4 cups vegetable stock2 cups pureed pumpkin1 can evaporated skim milk1/2 teaspoon salt1/4 teaspoon pepper1/2 teaspoon nutmeg1 Tablespoon honey
Directions
Saute onion and mushrooms in olive oil until soft. Add flour and toss til well coated. Add curry and toss again, cook for 1 minute stirring constantly. Add broth and stir until well combined. Cook until gently boil for 3 minutes or until thickened. Add rest of ingredients and blend well. Heat thru and serve. If soup is too thick, you can add more broth, milk or even just a little water. Serves 3
