Veal with Mushrooms and Tomato

White Veal pounded flat by the butcher, 4 pieces, 1 lb4 plum/ san marzano tomatoes, chopped5 mushrooms, sliced.5 of a red onion, sliced/ chopped3 cloves of garlic chopped3 oz vermouth1 tbsp olive oil.*I also added a slice of light havarti cheese on the top of my piece to get some calcium in, there was no ingredient I could find in the index for it :)
put olive oil in a stainless pan and let it heat up. add veal (I cooked 2 at a time) cooking for about a minute and a half on each side, place eat on plate on the side. In the same pan, with the juices/oil, add garlic, onions and let cook for a minute, then add tomato and mushrooms and vermouth. Cook for about 2 minutes, and then add meat (and the juices that have run onto the plate) and cook for another minute. (this is when I plated, and added my thin, light havarti slice, which melted quickly)
I'm sure that this could be perfected with some herbs, but I loved the taste and simplicity. It literally took me 15 minutes to make the meal, and since I only used one chopping board one knife, and 1 pan, (the salad I served it with is pre washed) and had very limited clean up as a result.
