Ingredients
Wild Rice, 1 BoxChicken Broth, 2.75 cupApples, fresh, .5 medium Carrots, raw, 1 largeMushrooms, 1 cup slicesLeeks, 1 leek Celery, raw, 1 stalk, mediumOlive Oil, 2 tbsp
Directions
Cook a small box of wild rice in broth for 45 minutes (results in ~4 cups rice). Chop all of the veggies small and saute in olive oil until soft. Once the rice is cooked, combine and season as desired. Delicious as a stuffing for squash or chicken. Makes 8 1/2 cup servings.
