Thai Green Curry (spicy!) with Rice! Time needed: 20-30 min 1/4 cup olive oil1 can Prik Khing Thai curry paste (e.g. at Jungle Jim’s –small (~3oz) green can)2 lbs mixed vegetables (e.g. green beans, okra, egg plant, cabbage)Brown Rice

Stir-fry 1 can of Prik Khing Curry Paste with 1/4 cup of cooking oil for 4 minutes on low heat. Add
The vegetables and boil for about 10-15 min or until cooked. Top with Thai basil and sesame seeds.
If it isn’t spicy enough for you yet, top with sliced chili peppers. Serve with brown rice.
PS. One can also add chicken, beef, salmon or tofu etc. Add those first, stir to coat, add a little water (0.5 cup), cook for 10 min, then add vegetables.
