Peach Crisp

Ingredients
5 to 6 ripe yellow peaches1/2 cup granulated sugar1 tablesppon of flour1 teaspoon grated lemon zestTopping:1/2 cup quick cooking oatmeal1/3 cup brown sugar1/3 cup flour1/2 teaspoon cardamom1 teaspoon cinnamondash of salt4 tablespoons unsalted butter1/4 cup blanched slivered almonds, lightly toasted (optional but included in nutritional calculation)
Directions
Preheat ove to 350 F.

Peel and slice peaches. YOu should have about 4 cups of slices. Place in a medium bowl and add sugar, flour, and lemon zest. Toss gently. Pour into a buttered 9x9 or 10x6 baking dish.

(I put in the calculator that this makes 9 servings - that's if you bake it in a 9x9 pan and make each serving 3' x 3'. These are pretty large servings for dessert, so you can cut them into smaller portions and reduce the calories that way.)

For the topping, mix together the oatmeal, brown sugar, flour and spcies. Witha pastry cutter or a large fork, cut in the butter until the mixture is crumbly. Add the almonds, if using. (You can do this in a food processor ifyou have one. Don't overprocess.)

Sprinkle the topping evenly over the peaches. Bake for 30 mins, oruntil the top is lightly browned and the peaches are bubbling.
