Simple and Sweet Tofu Marinade

1 tbs Brown Sugar2 tbs soy sauce (or liquid aminos)2 cloves Garlic1/2 block extra firm tofu
Cut the tofu into square 1 inch thick. Place on towels and press gently to release water.
In a dry nonstick pan over medium heat, brown the tofu one side at a time. Occasionally press the tofu with a spatula to release excess water, but otherwise don't fuss with it. Flip when the first side is a nice golden brown.
While tofu browns, mince the garlic. Stir soy sauce and sugar together and add the garlic. When tofu is browned, soak in marinade for 1/2 hour.
Because we've drained all liquid from the tofu, it's now ready to absorb the marinade like a sponge. Such flavor! Delicious!
