L.R. sausage sauerkraut supper

Ingredients
1 T. fat of some kind600g (4 cups) carrot chunks734g (4 cups) potato chunks1 qt. sauerkraut, rinsed and drained2 1/2 lbs. venison sausage214g (1 onion), thinly sliced3 garlic cloves, minced1-1/2 cups chicken bouillon1 tsp. pepper1/2 tsp. caraway seed
Directions
In a 5-qt. slow cooker, layer carrots, potatoes and sauerkraut. In a skillet, brown the sausage. Transfer to the slow cooker. Saute onion and garlic in 1 T. fat until tender. Add bouillon. Bing to a boil; stir to loosen browdned bits. Stir in pepper and caraway. Pour over sausage. Stir. Cover and cook on high for about 4 hours. Makes 13-1 cup servings about 211g each.

    I am not great with substitutions. Is there something I could use instead of the venison sausage? Hubby loves sauerkraut but don't think the sausage is widely available. - 12/12/08

    You can use any kind of sausage, even smoked sausages are good. It would change the calorie count depending what kind you used of course.
