Spinach & Asiago Stuff Pork Loin Chops

Ingredients
1 lb pork loin top loin chops-boneless1/2 pkg thawed frozen spinach2 cloves fresh minced garlic4 oz shredded Asiago cheese1 cup fresh mushrooms2 T butterseason to taste
Directions
Use 1.5 cloved minced garlic, butter, and mushrooms and saute in a pan. Take thawed chops and pound flat. Lightly season. sprinkle muroom mixture, spinach and cheese onto seasoned chops. Fold chops over, seal sides together with a toothpick if needed. Lightly season outside of chops and place remaining garlic on top. Bake at 350 covered, on a raised rack for approximately 45 minutes. pour a small amount of water in pan under rasied chops.

    This was VERY good! I changed a few things...used fresh spinach instead of frozen. Next time I will cook it for less time...seemed a little over done on top. - 2/11/11
