Corn and Tomato Cilantro Salad

Ingredients
1 cup yellow corn kernels1/2 bell pepper, seeded and diced1 medium tomato, diced4 Tbs fresh cilantro, chopped1 tsp balsamic vinegar1 tsp olive oil (optional)1/8 tsp salt (optional)black pepper to taste
Directions
In a medium bowl combine corn with chopped pepper, tomato, and cilantro. (Note that you may use any color of bell pepper. Nutrition information includes 1/2 of a large yellow pepper.)

Toss with vinegar, olive oil, and salt. (Note that salt and olive oil are optional, but included in the nutrition information.) Add black pepper to taste.

*To make this side dish into a light main course add black beans.
