Pumpkin Pie with Streusal Topping

Ingredients
2 pie shells1 can Pure Pumpklin (796 ml)1 300 ml can Low Fat Eagle Brand Sweetened Condensed Milk2 egg yolkscinnamonnutmegcloves or allspice2 egg whitesStreusal topping- Less than a 1/4 cup brown sugar2 tbsp chilled buttercinnamon
Directions
Makes 2 pies (8 pieces each pie)

Prepare pie shells as indicated on box (for Tenderflake brand, let sit on counter for 15 minutes and use a fork to poke the bottom of the shells a few times)
Preheat oven to 425 degrees.

While oven preheating, mix pumpkin, egg yolks, cinnamon and seasonings and sweetened condensed milk.

In separate bowl, whip egg whites until soft peaks
Gently fold egg white mixture into pumpkin mixture.
Pour into shells.
PLace in preheated oven for 15 minutes.

While waiting, put butter, brown sugar and cinnamon in bowl and use pastry cutter or fork to turn mixture into crumbly form.

After 15 minutes, remove pies and sprinkle streusal topping. As an alternate you can add chopped walnuts to the topping mixture also. I didn't do this as to save on calories (and I didn't have walnuts in the house).

Reduce oven temperature to 350 and cook for 40 minutes or until fork comes out clean/pie is set.

Cool. Enjoy!

This recipe was originally found on allrecipes.com, but I adjusted it with the low fat sweetened condensed milk. The orgiinal recipe was also for just 8 servings, but I found this mixture easily filled 2 deep dish Tenderflake pie shells. If you have a larger pie shell, please ensure you adjust your calorie count accordingly.
