Ingredients
1 can tuna (in water), drained very well2 dill pickle spears (more or less)1/2 tbsp light mayo2 slices Rye bread (or a hearty bread)1/2 cup low-fat cheddar cheese, shredded
Directions
Toast the rye bread. ( For softer tastes, skip the toasting.) Drain the tuna well, and mix with 2 dill pickle spears, diced. Add 1/2 tbsp light mayo, or less to the mix and stir well to thouroughly combine. Put half the mixture on one slice of rye bread, and the rest on the other half of rye bread. Place on a baking sheet, and turn on the broiler of your oven. Top each slice with a light sprinkle of low-fat cheddar cheese and place under a hot broiler. STAY CLOSE! The time depends fully on your oven. Anywhere from 2-6 minutes later you will have warm gooey tuna melts.

* Serves 2 and accompanied well by fresh veggies or pretzels.

* Feel free to increase the amount of pickle and complete leave out the mayo for a very low-fat treat. It still is packed with flavor, but less guilt.
