Shrimp and Curried Rice

Ingredients
Onions, raw, 1 cup, chopped Carrots, raw, 1 cup, chopped Garlic, 2 cloveCurry powder, 2 tbsp*Brown Rice, long grain, 1 cup Basil, 10 leaves Shrimp, raw, 8 oz Olive Oil pan spraysalt and pepper
Directions
Spray large skillet with Olive Oil pan spray. Over medium heat, add the oinion and carrots, stirring occasionally, add a bit of water if needed, cook until soft about 6-8 min.

Add garlic and curry, cook 2 minutes, stirring.

Add rice, 2 1/2 cups of water, bit of salt and pepper, bring to a boil. Reduce heat to medium-low, cover, and simmer about 30 minutes.

Add the shrimp to the rice, stir, cover and cook until shrimp are opaque, about 5 minutes. Remove from heat, stir in basil, serve.

Would be wonderful with a raisin and chopped almond garnish, although not included in the nutritional stats.
