Oatmeal Pancake

Ingredients
1 cup old fashioned oatmeal1/2 cup cottage cheese 8 egg whites2 t. vanilla1/2 t cinnamon1/2 t nutmeg
Directions
Blend all ingredients with a stick blender until smooth. Spray a nonstick skillet with oil and add 1/2 cup batter. Cook over medium heat until both sides are lightly browned. I use sugar free syrup as it needs something sweet. You could use maple flavoring instead of vanilla.
