Chicken Picatta

Ingredients
3 boneless, skinless chicken breasts3/4 cup flour2 Tbsp olive oil1 1/2 cups mushrooms, sliced4 oz white wineJuice of one lemon1 cup chicken broth3 Tbsp parsley, chopped6 cups whole wheat spaghetti, cooked and drained
Directions
Cut each chicken breast in fourths and place each piece between two pieces of plastic wrap. Pound each piece of chicken until about 1/4 inch thick. Place chicken in zip top bag and add flour. Seal and shake bag to coat chicken. Heat 1 Tbsp oil in pan over medium heat. Add chicken pieces and cook about two minutes each side, or until lightly browned and chicken is cooked. Remove chicken from pan and add 1 Tbsp oil and mushrooms. Cook until mushrooms are soft and lightly browned. Add wine to pan, stirring to deglaze pan. Add lemon juice and chicken broth and bring to boil. Add parsley. Add chicken back to pan. Heat through. Serve chicken and sauce over pasta.
