Cauliflower soup

650 gms cauliflower (cut into florets)one medium sized onion (fine chop)two tsp oliv oil4 small potato (peeled and cut into small pieces)3/4 cup of milk - low fat2 cloves of garlic (fine chopped)1.5 cups chicken OR veg stock if you want a vego-meal1.5 cups of watersalt and pepper to taste
Heat the oil in a large saucepan over medium heat. Add the onion garlic and cook, stirring, for 5-6 minutes or until soft.
Add the cauliflower, potato, stock and water. Cover and bring to the boil. Reduce heat to medium-low and simmer, partially covered, for 15 minutes or until the cauliflower and potato are tender. Set aside for 5 minutes to cool slightly.
Place half the cauliflower mixture in the jug of a blender and blend until smooth. Transfer to a clean saucepan. Repeat with remaining mixture. Add the milk. Place over low heat and cook for 1-2 minutes or until heated through.
