Mashed Sweet Potato

1 large sweet potato1/4 c. milk (or as much as needed to reach desired consistency)1 tbl. butter (margerine, smart balance, all work fine).25 tsp. vanilla extract (optional)salt to taste
Preheat oven to 450 degrees. Wash sweet potato, spray with non-stick cooking spray, wrap in foil and bake for 45 minutes or until very soft.
Once it has cooled a bit, peel the baked potato and put in a bowl with butter and vanilla extract (which is optional) and mash. Add milk slowly as you mash it together so as to reach your desired consistency.
Optional- add brown sugar (or sugar substitute), cinnamon, ground cloves, nutmeg, or pumpkin spice; whatver you like to suite your personal palate.
