1/2 cup Mexican Cheese (Kraft)2 Tbsp Fresh Lime Juice1 lb Cod (4 fillets)2 large tomatoes2 jalapeno1 tbsp chopped fresh cilantro1/2 cup Ken's Lite Sun Dried Tomato Dressing
Heat oven to 400 degrees
Mix dressing and juice. Place in a baking dish drizzle 1/2 of the dressing juice mixture over fish.
Bake 20 mins while you wait mix the chop cilantro, tomatoes and jalapeno into the other half of dressing mixture. Once baking is done pour the tomato mix and add cheese turn over up to broil place the fish back under the broiler until the cheese melts this should take a few minutes so watch it.
