Lentil Soup with Bacon

3 cups red lentils1 lb bacon3 tbsp bacon fat1 cup rough chopped carrots1 cup chopped celery2 medium onions, rough chop3 garlic cloves, rough chop4 cups chicken broth (low fat, low sodium preferred)4 chicken bullion cubes16 cups watersuggested spices: bay leaves, sage, thyme, oregano, peppercorns,
cut bacon strips into square pieces, fry to desired crispness and remove from fat to cool. Transfer 3 tbsp bacon fat to stock pot and add carrots, onions, celery, and garlic to saute over medium heat until onions are translucent. Add chicken stock, water, bullion cubes, and desired spices and heat to boiling. Add lentils and continue to boil, following cooking directions on your lentil packaging. The soup will be done when carrots are cooked through and lentils are done! Add bacon and continue to cook 15 minutes before serving, or crumble and add on top of served soup if crispy bacon is your thing!
