Honey Barbecue Chicken Stir-Fry

2 Chicken Breasts (approx 1 lb uncooked)1TBSP Honey1 TBSP rice vinegar4 TBSP ligh soy sauce2 TBSP barbecue sauce2 tsp garlic powder2 TBSP olive oil1 pound frozen broccoli - thawed1 3/4 cup chicken stock3/4 cup uncooked arborio rice
Bring chicken stock to a boil and stir in rice. Cover and cook on medium low about 20 minutes or until liquid is absorbed.
Cut chicken into thin strips.
Mix honey, vinegar, soy sauce, barbecue sauce, and garlic powder together.
Add oil to a hot skillet. Saute chicken breasts until browned on all sides. Add broccoli and continue cooking until heated through. Add sauce and cook until slightly thickened.
Serve over rice.
