Asparagus & Wild Rice Soup

Ingredients
1 cup chopped onion3 tbsp butter1 sm can mushrooms2 cups asparagus cut into 1/2 inch pieces6 cups chicken broth1/2 cup chopped fresh parsley1/2 tsp salt1/2 tsp dried thyme1/4 tsp pepper1/8 tsp cayenne pepper2 cups cooked wild rice3 tbsp cornstarch1/3 cup water
Directions
saute onions and mushrooms in butter for 4 minutes. add asparagus, broth and seasonings, cover and simmer for 30 minutes.
add rice. combine cornstarch and water until smooth; gradually stir into soup. bring to a boil; cook and stir for 2 minutes until thickened.

    Used 1/3 cup of chicken stock in place of the water. More flavor to the rice. - 3/4/21
