Jalapeno-Honey Pork Tenderloin

Ingredients
1 12oz pork tenderloin1/3 cup honey3 tbsp light soy sauce1 tbsp sesame oil2 fresh jalapeno peppers (you can seed them or keep the seeds), finely chopped1 tbsp grated fresh ginger (can substitute dried, ground)1/4 to 1/2 tsp crushed red pepper
Directions
1. Trim fat from meat. Place meat in a resealable plastic bag set in a shallow dish. For marinade: in a small bowl combine honey, soy sauce, sesame oil, chopped jalapeno peppers, ginger and crushed red pepper. Pour marinade over meat. Seal bag; turn to coat meat. Marinate in the refrigerator for at least 12 hours or up to 24, turning bag occasionally.

2. Drain meat, reserving marinade. In a grill with a cover, test for medium to high heat. Place meat on grill rack. Cover and grill for 40 to 50 minutes or unitl juices run clear, brushing once with reserved marinade after 15 minutes of grilling. Discard remaining marinade.

3. Remove from grill, cover with foil, and let stand for 10 minutes before slicing. If desired serve with hot cooked rice.

Oven directions: prepare recope as directed in step 1. Drain meat, reserving marinade. Place meat on a rack in a roasting pan. Roast in a 425 degree oven for 25 to 35 minutes or until juices run clear brushing once with reserved marinade after 10 minutes of roasting. Discard remaining marinade. Remove from oven, cover with foil. Let stand for 10 minutes before slicing
