Pumpkin Rocket Fetta Salad

Ingredients
100grams of Pumpkin, cut into small cubes1 Cup Rocket leaves1 Cup Baby Spinach leaves1/2 Cup Cherry Tomatoes cut in half50grams Danish Fetta cut into cubes5 or 6 Kalamata Olives, pitted and sliced1 Tbs Pinenuts, lightly toastedOlive Oil, Balsamic Vinegar and Lemon Juice to dress salad
Directions
1. Grill pumpkin til cooked (soft and starting to brown) - approximately 10 minutes each side.
2. Prepare baby spinach and rocket leaves by washing then placing in salad bowl.
3. Add cherry tomatoes, kalamata olives, fetta, and pinenuts.
4. When pumpkin is ready, sprinkle on top of the salad while still warm, then dress with olive oil, balsamic vinegar, lemon juice and some pepper. Toss til mixed through then serve.
Serves 2.
