Moms' sour cream potatoes

Ingredients
4 small russet potatoes, peeled and sliced 1/2 small onion, diced1 can healthy request cream of mushroom soup, undiluted1/2 low fat sour cream6 oz diced extra lean ham1/2 cup shredded cheddar cheese
Directions
Boil onion and potatoes in lightly salted water. Cook 10 minutes until potatoes are just tender. Drain well.

Mix soup and sour cream together.

In a prepared casserole place half the potato/onion mix. Lightly salt and pepper. Spoon 1/2 the soup mixture over the potaotes. Top with 3 oz ham. Repeat layers. Top with cheese.

Bake, covered in a preheated 375 degree oven for 20 minutes. Let cool 5-10 minutes to thicken sauce.
