Tomato Basil Soup

4 cups of canned crushed tomatoes4 cups V8 Vegetable Juice, low sodium14 to 16 Basil leaves1 cup fat free half and half1 tbsp I Can't Believe It's Not Butter Light Spread1/2 cup Low Sodium Chicken Broth
1. Combine crushed tomatoes and V8 Vegetable Juice in a saucepan and bring to a simmer.
2. Simmer for 30 minutes.
3. Add washed Basil leaves to the soup and puree in a blender, food processor or use a hand held immersion blender until smooth.
4. Return to saucepan and add the chicken broth and light margarine spread. Once the margarine spread has melted add the fat free half and half while stirring and cook over low heat until warmed through.
5. Garnish with additional basil leaves if desired and serve.
