Introduction

Comfort food for me. Just thought I'd share the recipe since I want it in my book and accessible to my nutrition center. Plus it's lower in fat than others. Comfort food for me. Ingredients

    1 tablespoon butter
    1 medium onion, sliced
    1 can beef broth
    2 ounces red wine
    1/4 cup plain croutons
2 slice Kraft 2% Swiss cheese

Directions

Melt the butter in a medium sauce pan over medium heat. Add the sliced onion and saute until translucent. Pour in the beef broth and bring to a gentle simmer. Add the wine and simmer for 5 minutes.

Ladle the soup into 2 oven-proof bowls that are sitting on a sturdy cookie sheet. Split the croutons between the bowls and lay a slice of Swiss cheese on each.

Put the broiler on high and the cookie sheet with bowls in the oven. Watch closely and remove the soup when the cheese is bubbly and just starting to brown.
