Ingredients

    1 oz (cubic inch) of soft gorgonzola
    2 tsp high-quality, coarse grain mustard (Maille)
    2 T balsamic vinegar
    2 cups fresh spinach
    10 pecan halves

Directions

In a small bowl combine balsamic vinegar, coarse mustard, and gorgonzola. Microwave for ten seconds to soften the cheese. Toss with spinach and top with pecan halves.
