Sweet Potato Spoon Bread

Ingredients
.5 cup yellow cornmeal12 oz sweet potatoes1.5 cups milk2 eggs, separated, plus 2 egg whites2 tbsp brown sugar1 tbsp molasses1 tbsp ginger1 tsp salt
Directions
Preheat oven to 350. Butter a 2 qt baking dish and dust with cornmeal. Cook sweet potatoes and mash.
Meanwhile, bring milk to a simmer in a saucepan. Whisk in cornmeal. Cook, stirring, until thickened, 1-3 min. Let cool.
Stir together sweet potatoes, cornmeal mixture, egg yolks, sugar, molasses, ginger and salt. Whisk the egg whites until stiff peaks form. Stir in half of egg whites to potato mixture. Fold in remaining egg whites.
Spoon into baking pan and bake 35-40 min.
