Dutch Babies/German Pancake

Ingredients
3 large eggs1/3 C. skim milk3 tsp. splenda1/3 C. flour2 Tb. butter for skilletLemon wedges or juicepowdered splenda (or powdered sugar)
Directions
Preheat oven and 10" iron skillet to 425F.

Whisk together the eggs, keep whisking while you add the milk, splenda, and flour.

Add butter to preheated skillet, when melted, add pancake batter, close ove and let bake for 13 minutes.

Carefully slip pancake onto plate and to serve it traditionally, sprinkle with lemon juice and powdered splenda (splenda can be powdered by putting it in the food processor or blender and whirled till powdery) If you have calories to spare use regular powdered sugar.

    I have made the original version with sugar and have also added variations of fresh fruit, blueberries, peaches, raspberries, etc. A very nice occasional breakfast treat. - 7/6/09

    pretty good, my husband wasn't wild about it but my son and i liked it. i added an apple cut inyo yhin slices, will probaably add cinnoman and vanilla next time - 11/3/07
