Holiday Cauliflower

Ingredients
4 cups of cauliflower1 can of low-fat cream of mushroom3-4 slices of bacon -- diced1/2 cup of shredded cheddar cheese
Directions
Put diced bacon in a large pot (teflon works best) and cook until you get crisp pieces. With the heat still on:
Add the cauliflower (pieces) and mix well.
Add the cream of mushrrom soup. Mix.
Add the cheese. Mix.
Pour all ingredients in a baking dish - I like to us aluminum ones for easy clean-up. COVER tightly with foil.
Bake at 350 for about 30 minutes.
Makes about 6 servings - that is what calculation is based on.
I "invented" this recipe a few years ago and it's still popular with the family :-)
