carrot and ginger soup

1 tsp olive oil1 medium onion, peeled and chopped2 garlic cloves, peeled and crushed1 tsp mustard powder (i dont add this)2.5 cm ginger, peeled and gratedfresh ground pepperpinch of salt1 litre vegetable stock6 medium carrots, peeled and chopped2 tbsp parsley ( i didnt use this)2 small potatoes, peeled and sliced.
in soup pot, heat up veggie stock
in frying pan, heat oil.
soften onion, garlic, ginger, salt and pepper (mustard powder)
after 2 minutes, add 2 tbsp of stock.
after another 2 minutes, add the carrots. mix well.
pour contents of the frying pan into the soup pot. bring to a boil and then allow to simmer for 40 minutes.
blend until smooth.
