Buckwheat - Corn Meal flat bread

* Buckwheat, 1 cup * Yellow Cornmeal, 1/2 cup * Baking Powder, 2.5 tsp * Granulated Sugar 1/8 cup * Olive Oil, 1/4cup * Egg, fresh, 2 large * Milk, nonfat, 1 1/8 Cup
Preheat oven to 400 F.
Line a 13 x 9 sheet pan with parchment paper (or butter the sheet to prevent sticking).
Mix together buckwheat flour, corn meal, baking powder, salt, and sugar. Combine eggs, milk and olive oil.
Stir into the dry ingredients until just moistened (batter will be thin).
Bake 15-20 minutes.
Let cool.
Cut into 12 rectangular pieces.
Note: The texture of this bread is like a corn bread, only thinner. They will not crisp up in the oven, but they can be grilled on the stove top with some butter for crispiness. Great in place of pita bread or with salads. Can be made into a sandwich too; grilled with tomato, cheese, and basil.
