Chicken Curry with Basmati Rice

Ingredients

1 - Chicken Breast, no skin, 1 breast, bone and skin removed 1 - Medium Onion1/2 Can - Diced Tomatoes, 400ml4 tbsp - Mild Curry Paste3 tbsp - Yogurt, plain, whole milk1 tbsp - Canola Oil, 1 tbsp (remove)2 cloves - Garlic1/2 tbsp - dried coriander1/2 cup - basmati rice1 cup - Chicken Broth
For Rice
Add Rice and Broth to uncovered pot
Bring to a boil
Reduce heat to lowest setting, cover and let cook for 20mins.
For Chicken
Heat oil in large skillet
Add Onions & Garlic - cook until translucent [approx. 3mins.]
Add Diced Chicken Breast and cook until sealed [No pink]
Add Curry paste and coat evenly.
Add Diced Tomatoes then simmer for 10mins.
Add Yogurt and coriander then simmer for an additional 10mins.
