Pumpkin Soup

2 medium onions, chopped (about 1 cup)2 tablespoons butter2 cans (14.5 ounces each) chicken broth, or bouillion2.5 cups of water2 pounds pumpkin, peeled & cut into cubes (about 5 cups)1 teaspoon salt1/4 teaspoon black pepper1 cup of milk
1. In a deep pot, saute the chopped onion in butter over medium heat until golden in color.
2. Add chicken broth. water, pumpkin cubes, salt & pepper. Bring to a boil & simmer about 20 minutes or until pumpkin cubes are soft.
3. Remove from heat & puree the mixture in a food processor or blender, then return to pot.
4. Add milk to puree & bring to boil over medium heat.
5. Adjust seasonings- you may want to add a lttle more salt-serve.
