Plaza III Steak Soup

Ingredients
1 1/2 pounds ground beef (93% lean)1 cup chopped onion2 cups shredded carrots1 cup diced celery2 cups shredded potatoes1/4 cup (half stick) butter or margarine1/2 cup flour2 quarts water1 can peas1/2 tsp salt1 tsp pepper5 Tbl BV sauce
Directions
In large soup pot, brown ground beef. Remove from pot with slotted spoon and set aside. Drain drippings from pot and discard.

Simmer onion, carrots, and celery in water (enough to cover) until partly cooked. Drain and reserve liquid.

Melt margarine in pot used to brown meat, then remove from burner and blend in flour to make smooth paste.

Gradually mix in water ( use liquid drained from vegetables, plus enough water to make a 2 quarts,) stirring and working until paste is thouroughly and smoothly mixed with liquid.

Return to stove, stirring frequently to prevent lumps.

Reduce heat to simmer, and meat and rest of ingredients. Stir well and simmer for about 20 minutes.

Makes 8 servings.

Freezes well.
