Avocado Soup

Ingredients
Butter, salted, 2 tbsp Scallions, raw, 2 small (3" long) Chicken Broth, 3 cup (8 fl oz)Avocados, California (Haas), 2 peeled, pitted and drizzled with lemon juiceHalf and Half Cream, .75 cupSalt and Pepper
Directions
1. Heat butter in skillet add scallions and cook for two minutes. Add 2 1/2 cups of chicken broth, bring to a boil, then lower heat and simmer 3 minutes.
2. In food processor, blend avocados, cream and remaining 1/2 cup broth until smooth.
3. Add the avocado mixture to the skillet and cook over medium heat stirring occasionally, for 2 minutes, or until heated through. Season with salt and pepper and serve.
