pumpkin whole wheat pancakes

Ingredients
4 3/4 C whole wheat flour3 T baking powder8 T sugar (or 1 C unsweetened applesauce)1 1/2 tsp salt6 eggs or 3 eggs and 5 egg whites4 1/2 C skim milk1/4 C oil (olive oil would be best)3 C canned pumpkincinnamonpumpkin pie flavoring
Directions
Mix all dry ingredients in mixing bowl. In a large measuring cup, measure the milk and oil and then add eggs. whisk or stir with a fork until all blended, add to dry mixture and mix until smooth. Add pumpkin and mix until smooth. Batter will be runny. Cook on a hot griddle, turning when lightly browned.
