Pumpkin Sugarfree Pie

Ingredients
Pumpkin, 1 15 oz can Libby'sEgg Beaters, 3/4 cup (= 3 eggs)Silk, 1 cup (unflavored soy milk)Cinnemon, 1 tspSplenda Brown sugar blend 3 tsp10 packets TruviaOatmeal raisin Smart for Life cookies (6)6 packets TruviaSmart Balance buttery sprayFat Free whipped topping
Directions
Preheat oven to 400° To make crust: Crumble oatmeal raisin cookies into a blender or food processor. Blend until cookies resemble bread crumbs. Add remaining ingredients and mix. Pour into a pie pan and press along bottom and sides to form a crust. Set aside.

Filling: Beat egg beaters, blend in soy milk. Blend into pumpkin. Add spices & sweetner & blend in.
Pour into crust and bake 50 minutes.

Serve with fat free or sugar free whipped topping.
