I whole chickenWater as needed3 cups chopped carrots3 cups chopped celery1 cup diced onion1.5 cups sliced mushrooms.5 lb. of orzo pasta2 eggs.3 cup lime juicesalt pepper2 tsp. rosemary2 tsp poultry seasoning
Put chicken and all chopped vegetables in a large soup pot. Add water until it is 2 inches from top. Bring to a boil, remove chicken carcass and remove all meat, chop finely and place back in pot. While still boiling add orzo, cook until tender. Take 2 eggs and scramble them. Add the lime juice to the eggs mixture and beat well. Take some of the broth from the pot to temper the eggs and beat well. Add egg mixture in and stir. Remove from heat. Wait until cooled and enjoy!
