Vegan Cassoulet

Ingredients
1 TB Olive oil1 parsnip, 1 inch slices1 onion, diced10 baby carrots, 1inch slices1 Fennel bulb, diced2 small zucchini, 1 inch slices2 cans diced tomatoes2 cans white beans
Directions
Makes 4 servings.
Cook first 6 ingredients, seasoned with salt and pepper, for five minutes. Add canned tomatoes with juice and 2 bay leaves, bring to a boil. Reduce heat and add beans. Return to a boil, then simmer for 20 minutes. Add chicken or vegetable stock as needed.
