SWEET POTATO, SCALLIONS(OR GREEN ONIONS),SLIVERED ALMONDS, CRAISENS, GARLIC, PAPRIKA, VINEGAR(RED WINE IF YOU HAVE IT), OLIVE OIL.
PEEL SWEET POTATOS AND CUT INTO CUBES. tHE CUBES SHOULD BE ABOUT THE SAME SIZE AS THE BULB OF THE SCALLION. PAR BOIL THE POTATOES FOR 20 MINUTES OR UNTIL THEY BEGIN TO SOFTEN
FINELY CHOP THE SCALLION STEMS KEEPING THE BULB END WHOLE. DRAIN THE POTATOES. ADD ALL INGREDIENTS TO SKILLET COATED WITH THE OLIVE OIL. COOK OVER MED TO HIGH HEAT UNTIL POTATOES BECOME CRISPY TURNING OFTEN. MAKES 8 1/2 CUP SERVINGS
