4 oz. fat-free cream cheese, room temperature (about 1/2 cup)4 oz. ricotta cheese, room temperature (about 1/2 cup)4 cup liquid egg substitute2 cup skim milk1 cup frozen unsweetened strawberries, thawed1/2 cup honey, warmed1 TSP ground cinnamon1 (12 to 16-inch) ciabatta loaf, crust removed and cut into 1-inch cubes
Place the cheeses in a large bowl and stir together with a wooden spoon. Add the eggs, 1/4 cup at a time, mixing until completely incorporated before adding the next. Stir in the milk, strawberries, honey, cinnamon and bread. Pour into an 8x10x2 inch casserole dish. If freezing, cover with plastic wrap and place in the freezer for 1 day and up to 1 month.
To bake, preheat the oven to 350. Bake covered with foil for 45 min. Increase the temperature to 400. Remove the foil and continue baking for 30-35 min.
