Introduction

Traditional plain biscotti, without any add-ins. A crisp thin cookie, goes very well with coffee and can be dipped in chocolate, or made with dried fruit and nuts. Ingredients

    1/3 Cup Butter
    3/4 Cup White Sugar
    2 Eggs
    1 tsp Vanilla extract
    1/4 tsp Almond extract
    2 tsp orange zest (apx 1 med orange)
    2-1/4 Cups all-purpose flour
    1-1/2 tsp baking powder
    1/8 tsp nutmeg
    1/4 tsp salt

Directions

1. Preheat oven to 325F (165C). Grease and flour a large baking sheet.
2. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs, extracts and zest. In s separate bowl, combine flour, baking powder, nutmeg and salt. Stir mixture into creamed mixture until just blended. If using dried fruit or nuts, add them now. Divide dough into 2 equal pieces; form into long, flat loaves about 1/2" thick and 12" long. Place the loaves 2" apart on prepared baking sheet.
3. Bake for 25 minutes or until a very light golden brown. Cool on pan for 5 minutes.
4. Transfer gently to a cutting board and with a serrated knife, cut diagonally into slices about 1/2" thick. Lay the slices, cut side down, on the baking sheet and return to oven for 10 minutes, turning once. Transfer to a wire rack to cool.

    Very Good
    A little difficult to make, required a bit more flour to make it easier to mold into a log, and i had to cut mine a bit thinner to let them dry out in the oven, otherwise a very crisp, low calorie cookie! I added a touch more nutmeg and i didn't have an orange, so i skipped the zest. - 3/11/12
