1 Medium Sweet Potato, peeled and cut into roughly 1.5 inch cubes3 Medium Red Potatoes, skin on, halved then quartered2 Large Carrots, cut into one inch long sections1 Medium Yellow Onion, halved then quartered8 Whole Cloves of Fresh Garlic1.5 tsp. Thyme, crushed in hands before adding to dish1.5 tsp. Rosemary, crushed in hands before adding to dishDrizzle of Extra Virgin Olive OilA sprinkling of Kosher Salt
Preheat oven to 400 degrees. Prep veggies and add to casserole dish large enough to hold all ingredients in a single layer. Drizzle with olive oil enough to coat veggies, but not so much it pools in the bottom of the dish. Toss with hands to ensure even coating. Sprinkle on top the herbs and kosher salt. Place in middle rack of oven. Cook 1 hour, stirring halfway through. Makes approximately 4 2-cup servings.
