Vegan Sour Cream Mashed Potatoes

Ingredients
3 Yukon Gold Potatoes1/4 c. Vegan Sour Cream1/4 c. Plain Soy Milk2 T. Earth Balance
Directions
1. Peel and dice the potatoes.
2. Boil potatoes for 20 minutes, or until cooked through.
3. Drain potatoes and return to pot.
4. Add sour cream, soy milk, and margarine.
5. Mash together and serve.
