Green Bean Casserole

2 lbs green beans, ends cut off10 oz chopped mushroomsgarlicsaltpeppercayenne2 tbsp flour3/4 cup vegetable broth1 tbsp dry sherry3/4 cup soy creamer1.5 slices whole wheat bread, grated into crumbs1 tbsp Earth Balancedash salt and pepper1/2-1 3 oz can french-fried onions
Boil beans in salted water for 6 minutes. Drain and spray with cold water so they'll stop cooking.
Saute mushrooms with garlic, cayenne, salt, and pepper until soft and the mushrooms exude juices.
Whisk flour into vegetable broth, add to mushrooms. Add sherry. Let thicken. Add soy creamer, simmer 5-10 minutes until thick.
Mix beans and mushroom sauce and fill an oiled casserole dish with bean/mushroom mix.
Make topping: Mix bread crumbs with Earth Balance, salt, and pepper. Spread on green beans.
Cook for 8 minutes on 425 degrees Fahrenheit. Remove from oven, sprinkle french fried onions on top. Return to oven for 5-7 more minutes.
